This is a “bad habit” of Neil deGrasse Tyson, who many times in the past has pointed out the technical mistakes of big producers when they decide to stop following the laws of nature. As for Top Gun: Maverick, well, he specifically mentioned that Tom Cruise ‘s character could in no way survive being ejected from his plane at Mach 10.5 speed, since his body would become… splatter under those conditions conditions.
